It is so clever! The combination of smoked trout and cucumber is delicious, but feel free to use an equal amount of another protein, such as smoked whitefish, smoked salmon, Perfect Hard-Boiled Egg or leftover chicken as filling for this unique \u201croll.\u201d<\/p>\n<ul>\n<li>\u00bd cup chopped smoked trout<\/li>\n<li>2 tablespoons mayonnaise<\/li>\n<li>1 teaspoon Dijon mustard<\/li>\n<li>1 medium (or large) cucumber, peeled, halved lengthwise, and seeded<\/li>\n<li>OPTIONAL:<\/li>\n<li>\u00bd to 1 teaspoon minced fresh dill<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p>In a large bowl, combine the trout, mayonnaise, mustard, and optional ingredients, then gently mix them until they\u2019re well combined. Adjust the seasoning to taste.<\/p>\n<p>Fill the center depression in each cucumber half with half the fish mixture. Put the cucumber halves together, as if they were halves of a hoagie roll. Wrap them in parchment paper (or other food wrap) and store them in the fridge (up to 12 hours) until you\u2019re ready to eat.<\/p>\n<p>TIP To seed a cucumber with ease, halve the cucumber, then use a spoon to scoop out the \u201cseedy marrow\u201d that runs down the center of the vegetable.<\/p>\n<p><strong>Macros per serving<\/strong> (made with optional ingredients): 440 calories, 5 g net carbs, 8 g total carbs, 3 g fiber, 3 g sugars, 22 g total fat, 45 g protein<\/p>\n<p><\/div>\n<p class=\"author-credit\">Excerpted from The 5-Ingredient Keto Cookbook by Stephanie Pedersen. \u00a92020 Sterling Epicure.
