Mix until uniform.<\/p>\n<p>Slice off and discard zucchini ends. Using a veggie peeler, slice zucchini into wide strips.<\/p>\n<p>Bring a large skillet sprayed with nonstick spray to medium-high heat. Add zucchini and carrots.<\/p>\n<p>Cook and stir until hot and slightly softened, about 3 minutes. Transfer to a strainer, and thoroughly drain.<\/p>\n<p>Remove skillet from heat, respray and return to medium-high heat. Add shrimp, and cook and stir until cooked through, about 4 minutes.<\/p>\n<p>Reduce heat to medium-low. Add drained veggies and sauce mixture. Cook and stir until hot and well mixed, about 2 minutes.<\/p>\n<p>Serve topped with scallions and peanuts.<\/p>\n<p><\/div>\n<p class=\"author-credit\">From Hungry Girl Fast &#038; Easy, by Lisa Lillien.
