Photo: Jennifer Davick.<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Garlic Parm Chicken<\/h3>\n<p class=\"servings\">Makes 4 servings<\/p>\n<ul>\n<li>1 pound raw boneless skinless chicken breast, cut into bite-size pieces<\/li>\n<li>1 cup chopped onion<\/li>\n<li>\u00bd teaspoon onion powder<\/li>\n<li>\u00bc teaspoon each salt and black pepper<\/li>\n<li>2 cups chopped mushrooms<\/li>\n<li>1 tablespoon chopped garlic<\/li>\n<li>5 cups roughly chopped spinach<\/li>\n<li>\u00bd cup light\/reduced-fat cream cheese<\/li>\n<\/ul>\n<p>Bring a large pot sprayed with nonstick spray to medium-high heat. Add chicken, onion, onion powder, salt, and pepper. Cook and stir until lightly browned, about 4 minutes.<\/p>\n<p>Add mushrooms and garlic. Cook and stir until chicken is fully cooked and veggies have mostly softened, about 3 minutes.<\/p>\n<p>Add spinach, and cook and stir until wilted, about 1 minute.<\/p>\n<p>Reduce heat to medium-low.
