Photo: \u00a9 2021 by Robert Bredvad<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Lemon and Garlic Glazed Chicken Thighs<\/h3>\n<p class=\"servings\">Makes 2 to 3 servings<\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>About 2 cups frozen peas<\/li>\n<li>6 chicken thighs<\/li>\n<li>6 lemon slices<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1 teaspoon Oryx desert salt<\/li>\n<li>1 teaspoon ground black pepper<\/li>\n<li>1 teaspoon dried parsley<\/li>\n<li>1 heaping teaspoon crushed garlic<\/li>\n<li>2 tablespoon raw honey<\/li>\n<li>Juice of 2 lemons<\/li>\n<li>Handful of chopped fresh parsley, thyme, or baby pea\nshoots for garnishing<\/li>\n<\/ul>\n<p>Preheat the oven to 375 degrees F. and spray an ovenproof dish with non-stick cooking spray.<\/p>\n<p>Place the frozen peas in the bottom of the dish and add about half of the onion.<\/p>\n<p>Place the chicken thighs on top of the peas and onion and place a slice of lemon on every piece of chicken.<\/p>\n<p>Sprinkle the rest of the onion over the chicken.<\/p>\n<p>Mix the olive oil, salt, pepper, dried parsley, garlic, honey, and lemon juice in a small bowl, and then pour over the chicken.<\/p>\n<p>Cover the dish with foil and bake for 15 minutes, then remove the foil and bake uncovered for another 30 minutes or until the chicken is cooked.<\/p>\n<p>Garnish with chopped fresh parsley, thyme or baby pea shoots before serving with basmati rice and vegetables of your choice.<\/p>\n<p><\/div>\n<p class=\"author-credit\">Excerpted from Mindful Eating. 78 Recipes to Cook Your Way to Better Health. \u00a9 2021 by Kelly Senyei.
