Photo: James Stefiuk<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Cowboy Caviar for One<\/h3>\n<p class=\"servings\">Makes 1 serving<\/p>\n<ul>\n<li>1 cup water<\/li>\n<li>1 medium ear corn, husked<\/li>\n<li>2 tablespoons chopped cilantro<\/li>\n<li>2 tablespoons lime juice<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>11\u20442 tablespoons red wine vinegar<\/li>\n<li>1\u20444 teaspoon salt<\/li>\n<li>1\u20448 teaspoon ground black pepper<\/li>\n<li>3\u20444 cup drained and rinsed canned black beans<\/li>\n<li>2 tablespoons chopped green onion<\/li>\n<li>1\u20444 cup diced red bell pepper<\/li>\n<li>1\u20442 cup diced avocado<\/li>\n<\/ul>\n<p>Pour water into Instant Pot\u00ae and add the trivet. Place corn on trivet.<\/p>\n<p>Close the lid; turn the knob to Sealing.<\/p>\n<p>Press Manual or Pressure Cook button and adjust time to 3 minutes.<\/p>\n<p>When the timer beeps, immediately turn the knob from Sealing to Venting, then remove the lid and carefully transfer corn to an ice bath.<\/p>\n<p>In a medium bowl, combine cilantro, lime juice, lemon juice, oil, vinegar, salt, and black\npepper. Add beans, green onion, and bell pepper, and stir.<\/p>\n<p>Cut corn kernels off the cob and gently stir into bean mixture.
