Photo: James Stefiuk<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Coconut Shrimp<\/h3>\n<p class=\"servings\">Makes 4 servings<\/p>\n<ul>\n<li>1 cup all-purpose flour<\/li>\n<li>1 teaspoon salt<\/li>\n<li>2 large eggs<\/li>\n<li>1\u20442 cup panko bread crumbs<\/li>\n<li>1 cup shredded unsweetened coconut flakes<\/li>\n<li>1 pound large shrimp, peeled and deveined<\/li>\n<\/ul>\n<p>Preheat the air fryer to 375\u00b0F.<\/p>\n<p>In a medium bowl, mix flour and salt. In a separate medium bowl, whisk eggs. In a\nthird medium bowl, mix bread crumbs and coconut flakes.<\/p>\n<p>Dredge shrimp first in flour mixture, shaking off excess, then in eggs, letting any\nadditional egg drip off, and finally in bread crumb mixture. Spritz with cooking spray.<\/p>\n<p>Place shrimp in the air fryer basket. Cook 10 minutes, turning and spritzing opposite side with cooking spray halfway through cooking, until insides are pearly white and opaque and internal temperature reaches at least 145\u00b0F.
