Heat over medium heat until sugar melts and starts to turn golden brown, about 5 minutes. Immediately pour resulting caramel into a 7-ounce ramekin and swirl so it covers bottom completely. Set aside.<\/p>\n<p>In a small bowl, combine remaining 1 tablespoon sugar, half-and-half, dulce de leche, egg yolk,\nvanilla, and cornstarch. Whisk until smooth, then add cinnamon and whisk until fully incorporated. Transfer mixture to ramekin.<\/p>\n<p>Place ramekin in a small baking dish. Add recently boiled water until it reaches halfway up the side of the ramekin.<\/p>\n<p>Bake 40\u201345 minutes or until custard is set around the edges but still a little jiggly in the center.<\/p>\n<p>Transfer ramekin to a wire rack and cool to room temperature. Run a thin knife around the edge of the custard to loosen, then place a small plate on ramekin and turn over until flan releases.
