Whisk to\ncombine. Set aside.<\/p>\n<p>In a small bowl, combine buttermilk, 1 tablespoon lemon juice, egg, oil, lemon zest, and vanilla. Whisk to combine. Pour wet ingredients into dry ingredients and use a spatula to mix until just combined, about six strokes, then add poppy seeds and fold to combine, four to six strokes. Do not overmix.<\/p>\n<p>Divide batter between prepared muffin cups. Bake 18\u201320 minutes or until muffins spring back when gently pressed in the center and tops are golden brown. Cool in pan 3 minutes, then transfer to a wire rack to cool to room temperature.<\/p>\n<p>Once cool, prepare glaze. In a second small bowl, add powdered sugar and remaining 1 teaspoon lemon juice and mix until smooth.
