Set aside to soak overnight. The next day, drain peas and transfer to a medium saucepan. Add enough cold water to cover, then place over medium-high heat. <\/p>\n<p>Bring to a boil, then immediately drain peas and return to the pan. Add 5 cups fresh water and 1 teaspoon salt. Bring to a boil over high heat. Reduce heat to medium-low and simmer 30\u201345 minutes until tender. Drain and transfer peas to a large bowl.<\/p>\n<p>Add onion, bell peppers, celery, cucumber, tomato, spinach, parsley, and mint and stir gently.<\/p>\n<p>Place mustard, honey, vinegar, lemon juice, oil, black pepper, and remaining 1\u20442 teaspoon salt in a jar with a lid and shake until emulsified.
