Photography by Nicki Dowey<br \/><\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Cinnamon Crepes<\/h3>\n<p class=\"servings\">Makes 6 servings<\/p>\n<ul>\n<li><span>1<\/span> cup plus 3 tablespoons all-purpose flour <\/li>\n<li><span>&frac12;<\/span> teaspoon ground cinnamon <\/li>\n<li><span>1<\/span> egg<\/li>\n<li><span>1&frac14;<\/span> cups 2 percent milk <\/li>\n<li class=\"no-quantity\"> Olive oil to fry <\/li>\n<li class=\"no-quantity\"> Fruit compote or preserves, or sugar, and Greek-style yogurt to serve <\/li>\n<\/ul>\n<p>Whisk the flour, cinnamon, egg and milk together in a large bowl to make a smooth batter. Let it rest for 20 minutes.<\/p>\n<p>Heat a heavy-bottomed skillet over medium heat. When the pan is really hot, add 1 tsp. oil, pour in a ladleful of batter, and tilt the pan to coat the bottom with an even layer. Cook for 1 minute, or until golden. Flip over and cook for 1 minute.
