Dry the skillet and cook bacon strips until crisp; chop and set aside. Add half of coconut milk to the potatoes; mash until combined.<\/p>\n<p>Beat in eggs until incorporated. Beat in more coconut milk, until the consistency of pancake batter. Stir in chives, bacon, and salt.<\/p>\n<p>Wipe out most of the grease from the skillet; heat on a grate over a medium heat cooking fire. For each pancake, slowly pour 1\/3 cup batter into the skillet and cook to brown both sides, turning once.
