Photography by ACP Magazines Limited<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Chorizo and Potato Galette with Green Olives<\/h3>\n<p class=\"servings\">Makes 4 servings<\/p>\n<ul>\n<li><span>2<\/span> sheets puff pastry <\/li>\n<li><span>2<\/span> tablespoons olive oil <\/li>\n<li><span>2<\/span> cloves garlic, chopped finely <\/li>\n<li><span>&frac12;<\/span> teaspoon sweet paprika <\/li>\n<li><span>2<\/span> teaspoons coarsely chopped fresh rosemary<\/li>\n<li><span>2<\/span> small unpeeled potatoes <\/li>\n<li><span>4<\/span> ounces cured chorizo sausage, sliced thinly <\/li>\n<li><span>&frac14;<\/span> small red onion, sliced thinly <\/li>\n<li><span>&frac13;<\/span> cup roasted pepper strips <\/li>\n<li><span>&frac34;<\/span> cup drained marinated green olives  <\/li>\n<li><span>&frac14;<\/span> cup fresh flat-leaf parsley leaves <\/li>\n<\/ul>\n<p>Preheat oven to 425\u00b0F. Line two cookie sheets with parchment paper. Place pastry on trays. Combine oil, garlic, paprika and rosemary in small bowl. Brush half the oil mixture over pastry, leaving a \u00bd-inch border.<\/p>\n<p>Slice potatoes thinly using mandolin or V-slicer. Top pastry pieces with single layer of potato; brush with remaining oil mixture; season.<\/p>\n<p>Bake 10 minutes.
