Photography by ACP Magazines Limited<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Tiramisu<\/h3>\n<p class=\"servings\">Makes 6 servings<\/p>\n<ul>\n<li>1\u00bc pounds double unfilled round sponge cake<\/li>\n<li>2 tablespoons instant coffee granules<\/li>\n<li>\u00bc cup boiling water<\/li>\n<li>\u2153 cup coffee-flavored liqueur<\/li>\n<li>1 teaspoon gelatin<\/li>\n<li>1 tablespoon boiling water, extra<\/li>\n<li>\u00be cup heavy cream<\/li>\n<li>\u00bc cup confectioner\u2019s sugar<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1\u00bd cups mascarpone cheese<\/li>\n<\/ul>\n<h4>Ganache<\/h4>\n<ul>\n<li>\u2154 cup cream<\/li>\n<li>6 ounces dark chocolate, chopped coarsely<\/li>\n<\/ul>\n<p>Make ganache. Line each hole of a greased six-hole (\u00be-cup) texas muffin pan with plastic wrap. Divide half the ganache over the base of each muffin hole. Refrigerate 20 minutes.<\/p>\n<p>Meanwhile, cut each sponge cake into three slices horizontally. Cut six 3\u00bc-inch rounds from three sponge slices and six 2\u00be-inch rounds from remaining three sponge slices.<\/p>\n<p>Dissolve coffee in the boiling water in small pitcher; stir in liqueur. Sprinkle gelatin over the extra boiling water in another small jug; stir until gelatin dissolves. Cool.<\/p>\n<p>Beat cream, sifted confectioners\u2019 sugar and extract in small bowl with electric mixer until soft peaks form; beat in gelatin mixture. Transfer mixture to large bowl; fold in cheese.<\/p>\n<p>Brush both sides of sponge rounds with coffee mixture. Spread half the cheese mixture into the muffin holes; top with small sponge rounds. Spread remaining cheese mixture over sponge layers; top with larger sponge cake rounds.<\/p>\n<p>Spread remaining ganache over sponge layers; refrigerate 3 hours or overnight. Remove tiramisu from pan; turn, top-side down, onto serving plates, remove plastic wrap.<\/p>\n<p>Serve dusted with a little sifted cocoa powder.<\/p>\n<p><strong>Ganache:<\/strong>\nBring cream to the boil in small saucepan; remove from heat.
