Pita bread salad, or fattoush, is a common example and its appeal goes far beyond leftovers.<\/p>\n<p>This pita salad with distinctly fall flavors boasts fantastic contrasts in texture and multiple sources of helpful carbohydrates (butternut squash, apples, and pita) to fuel your run or any endurance-intensive workout.<\/p>\n<p>When buying pita chips, look for brands that contain no more than 3 grams of fat per 1\u2011cup \u00adserving. Or, you can use our homemade Baked Pita Chips. This recipe can easily be doubled.<\/p>\n<p>Adjust oven rack to lowest position and heat oven to 450 degrees. Whisk 4 teaspoons oil, lemon juice, and sumac together in large bowl; set aside. Toss squash with remaining 1 teaspoon oil, salt, and pepper.<\/p>\n<p>Spread in even layer on rimmed baking sheet and roast until well browned and \u00adtender, 10 to 12 minutes, stirring halfway through roasting. Set aside to cool slightly, about 5 minutes. Add squash, pita chips, lettuce, apple, edamame, parsley, and scallions to bowl with dressing and toss gently to coat.<\/p>\n<p>Season with salt and pepper to taste. To serve, top each portion with 2 tablespoons feta and sprinkle with extra sumac.
