Let cool, then cut the kernels off the cobs.<\/p>\n<p>In a large skillet, heat the oil over medium heat. Add the jalape\u00f1o and cook for 1\u20132 minutes. Add the corn, coriander, cumin, chili powder, and garlic. Cook, stirring occasionally, for 3\u20135 minutes or until the corn is heated through.<\/p>\n<p>In a large saucepan, bring 2 cups water to a boil.
