Discard outer leaves of cauliflower and trim stem flush with bottom florets. Halve \u00adcauliflower lengthwise through core. Cut 11\/2\u2011inch-thick slab lengthwise from each half, trimming any florets not connected to core. (You should have 2 steaks; reserve remaining cauliflower for another use.)<\/p>\n<p>Place cauliflower steaks on rimmed baking sheet and drizzle with 1 \u00adtablespoon oil. Sprinkle with 1\/8 teaspoon salt and pinch pepper and rub to distribute. Flip steaks and repeat with remaining 1 tablespoon oil, 1\/8 teaspoon salt, and pinch pepper.<\/p>\n<p>Cover baking sheet tightly with aluminum foil and roast for 5 minutes. Remove foil and roast until bottoms of steaks are well browned, 8 to 10 \u00adminutes. Gently flip steaks and continue to roast until tender and second sides are well browned, 6 to 8 minutes longer.<\/p>\n<p>Transfer steaks to platter and brush evenly with 2 tablespoons chimichurri.
