Toss artichokes and \u00adfennel with garlic, 1 tablespoon oil, and pepper and carefully arrange in \u00adsingle layer on hot sheet. Roast vegetables until browned around edges, 15 to 20 minutes. Mince roasted garlic. Whisk garlic, lemon juice, mustard, tarragon, and remaining 2 teaspoons oil together in large bowl. Add vegetables and toss to coat. Season with salt and pepper to taste, and serve.\n<strong>\nVariation <\/strong><\/p>\n<p>Roasted Artichoke Hearts with Bell Pepper and Olives Omit fennel. Toss artichokes with 1 thinly sliced red bell pepper and 1\/4 cup \u00adpitted and halved kalamata olives before spreading on baking sheet.
