Keep warm.<\/p>\n<p>Sprinkle the pepper on both sides of the tuna steaks. Place a large skillet or cast-iron pan over high heat. Add the remaining 1 tablespoon oil and swirl to distribute it evenly. Add the tuna steaks and sear for 1 minute. Flip and sear for 1 minute on the other side. (The goal is to cook the tuna on each side just until the outer \u00bc inch of the tuna turns from pink to beige. If you don\u2019t like rare tuna, feel free to cook the tuna for longer.)<\/p>\n<p>To assemble the burgers, place a tuna steak on each bun bottom, add a generous scoop of slaw, and cover with the bun top.<\/p>\n<p><strong>For the Coleslaw:<\/strong><\/p>\n<p>Whisk together the mayonnaise, lemon juice, ginger, miso, and wasabi in a medium bowl. Stir in the coleslaw mix and onion. Cover and chill until ready to serve.
