{"id":14252,"date":"2023-08-31T16:03:53","date_gmt":"2023-08-31T16:03:53","guid":{"rendered":"https:\/\/healthyaging.net\/magazine\/uncategorized\/avocado-pasta-2\/"},"modified":"2023-08-31T16:53:16","modified_gmt":"2023-08-31T16:53:16","slug":"overstuffed-mini-peppers","status":"publish","type":"post","link":"https:\/\/healthyaging.net\/magazine\/recipe\/overstuffed-mini-peppers\/","title":{"rendered":"Overstuffed Mini Peppers"},"content":{"rendered":"<p><p class=\"back-link\"><a href=\"https:\/\/healthyaging.net\/magazine\/fall-2023\/food-vegetables-to-the-rescue\/\" target=\"_blank\" rel=\"noopener\">Back to Food Article<\/a><\/p><\/p>\n<p><a href=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2023\/08\/overstuffed-mini-peppers.600.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14254\" src=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2023\/08\/overstuffed-mini-peppers.600.jpg\" alt=\"\" width=\"600\" height=\"741\" srcset=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2023\/08\/overstuffed-mini-peppers.600.jpg 600w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2023\/08\/overstuffed-mini-peppers.600-243x300.jpg 243w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<div class=\"recipe-card\"><\/p>\n<h3>Overstuffed Mini Peppers<\/h3>\n<p class=\"servings\">Makes 8 servings<\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n \tMASALA PEANUTS<\/p>\n<li>2 tablespoons chickpea flour<\/li>\n<li>4 teaspoons water<\/li>\n<li>2 teaspoons avocado oil, or other neutral oil of choice<\/li>\n<li>2 teaspoons paprika<\/li>\n<li>\u00bd teaspoon ground turmeric<\/li>\n<li>\u00bd teaspoon ground cumin<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>\u00bd teaspoon cracked black pepper<\/li>\n<li>\u00bd cup raw or roasted unsalted peanuts or cashews<\/li>\n<\/ul>\n<li>10 oz. mini sweet peppers\/capsicums (8\u201310 peppers), halved \n             lengthwise with stem intact and seeded<\/li>\n<\/li>\n<\/ul>\n<p>         CHILE-GARLIC MUSHROOMS<\/p>\n<ul>\n<li>2 teaspoons olive oil<\/li>\n<li>8 oz. white mushrooms, finely diced or blitzed in a food processor<\/li>\n<li>2 teaspoons minced garlic<\/li>\n<li>\u00be teaspoon fine sea salt<\/li>\n<li>\u00bc teaspoon red chile flakes<\/li>\n<li>1 cup goat cheese, crumbled<\/li>\n<li>1 tablespoon chopped cilantro\/fresh coriander<\/li>\n<\/ul>\n<p>Preheat the air fryer to 350\u00b0F. or oven to 400\u00b0F.<\/p>\n<p>Mix together the chickpea flour, water, oil, paprika, turmeric, cumin, salt, and black pepper in a bowl to make a thick marinade.  <\/p>\n<p>Add the peanuts and mix. Try to ensure that all the peanuts get coated with the paste. <\/p>\n<p>Lightly spray the air fryer base with oil and spread the nut mixture evenly on the base, or spread the nuts on a parchment-lined baking sheet (you can also lightly spray the parchment). Air fry for 5 minutes, tossing halfway through, or bake for 12\u201315 minutes, turning over halfway through (you may need to use a spoon to scrape the peanut mixture off the parchment), until golden brown. <\/p>\n<p>Remove from the air fryer or oven and let cool (leave the air fryer or oven on). The nut mixture will stick together. Once cool, finely chop or pulse 3 to 4 times in a food processor and set aside. <\/p>\n<p>Place the mini peppers on the air fryer base or spread on a baking sheet. Spray lightly with oil if desired, and air fry for 5 to 6 minutes or bake for 10 to 12 minutes, flipping halfway through, until the peppers are soft. Let cool until you can hold them, about 5 minutes.<\/p>\n<p>Meanwhile, for the chile-garlic mushrooms, heat a medium skillet over medium heat. When hot, add the olive oil, mushrooms, garlic, salt, and chile flakes and cook, stirring occasionally, until the\nmushrooms are tender, about 5 minutes.<\/p>\n<p>Combine the peanuts with the crumbled goat cheese. Stuff each mini pepper with the mushrooms, then top with the peanut-goat cheese mixture (press the mixture down; you want to overstuff these!). Garnish with the cilantro and serve immediately.<\/p>\n<p><strong>To Veganize<\/strong><\/p>\n<p>Use \u00bd cup nutritional yeast instead of the goat cheese (but mix it in with the mushrooms instead\nof the peanuts so that it blends more easily).<\/p>\n<p><\/div>\n<p class=\"author-credit\"> Reprinted with permission from <em>Reprinted with permission from THE VEGETARIAN RESET by Vasudha Viswanath, The Collective Book Studio, January 2023.
