Once water begins to boil, add pasta and salt. Cook, stirring occasionally, until pasta is soft enough to bend easily but not cooked through, about 10 minutes. Drain and set pasta aside.<\/p>\n<p>Return pot to medium heat and add olive oil.<\/p>\n<p>Once hot, add onion and cook until just tender, about 2 minutes. Add mushrooms and cook until mushrooms are soft, about 2 minutes. Add garlic and spinach and cook until spinach is thoroughly wilted, about 3 minutes. Remove from heat and transfer to a medium bowl to cool, about 5 minutes.<\/p>\n<p>To cooled spinach mixture add ricotta, mozzarella, and Italian seasoning. Mix well. Lay cooked lasagna noodles on a cutting board and divide filling between noodles. Spread filling over length of each noodle, then roll into a jelly roll shape.<\/p>\n<p>To prepared pan add 1\u20444 cup marinara sauce and spread evenly. Place rolls seam side down in pan. Spoon remaining 1\u20444 cup sauce over top of rolls. Cover dish tightly with foil and bake 25 minutes.<\/p>\n<p>Remove foil and top rolls with Parmesan and return to oven uncovered for 10\u201315 minutes or until Parmesan is melted and rolls are heated through.
