Add cloves, cinnamon, and ginger and cook over\nmedium heat, stirring occasionally, until mixture registers 150 to 160 degrees, about 5 minutes.<\/p>\n<p>Remove from heat and let mixture cool to 105 to 110 degrees, about 15 minutes. Strain cream\nmixture through fine-mesh strainer into medium bowl. Gently whisk in buttermilk.<\/p>\n<p>Set eight 5-ounce ramekins on rimmed baking sheet. Divide buttermilk mixture evenly among\nramekins. Invert second rimmed baking sheet on top of ramekins and carefully transfer to\nrefrigerator. Chill for at least 6 hours or up to 3 days.<\/p>\n<p>(If chilling for more than 6 hours, cover each ramekin with plastic wrap instead of a baking sheet.)<\/p>\n<p>For the pecans Adjust oven rack to middle position and heat oven to 350 degrees. Spread\npecans in single layer on rimmed baking sheet and toast until fragrant and slightly darkened, 8\nto 12 minutes, shaking sheet halfway through toasting.<\/p>\n<p>While nuts toast, combine maple syrup, oil, and salt in medium bowl. Transfer nuts to bowl with maple syrup mixture and toss to combine. Do not wash sheet.<\/p>\n<p>Line now-empty sheet with parchment paper. Spread nuts on prepared sheet in single layer\nand bake until nuts are crisp and dry, 9 to 11 minutes, stirring every 3 minutes. Transfer sheet to\nwire rack and let nuts cool completely, about 20 minutes.<\/p>\n<p>Transfer nuts to cutting board and coarsely chop. (Nuts can be stored in airtight container at room temperature for up to 5 days.)<\/p>\n<p>Working with 1 panna cotta at a time, insert paring knife between panna cotta and side of\nramekin. Gently run knife around edge of ramekin to loosen panna cotta. Cover ramekin with\nchilled serving plate and invert panna cotta onto plate. (You may need to gently jiggle ramekin.)<\/p>\n<p>Drizzle each panna cotta with extra maple syrup, sprinkle with pecans, and serve.<\/p>\n<p><\/div>\n<p class=\"author-credit\">Reprinted with permission from Gatherings, Casual-Fancy Meals to Share.
