Add the onion, carrot, celery and garlic. Cook over medium heat for about 5 minutes, stirring occasionally, until soft and just beginning to brown.<\/p>\n<p>Add the tomatoes, pur\u00e9e, sugar, stock and herbs, retaining some to garnish.<\/p>\n<p>Bring to a boil, then cover and simmer gently for about 20 minutes until all the vegetables are very soft.<\/p>\n<p>Process or blend the mixture until smooth, then press it through a sieve to remove the skins and seeds.<\/p>\n<p>Return the sieved soup to the cleaned pan and stir in the milk. Reheat gently.<\/p>\n<p>Stir, without allowing it to boil. Season to taste with salt and ground pepper.
