Whisk the eggs and water together in a shallow dish. Place the breadcrumbs in a second shallow dish. Dip the fish into the egg mixture, then into the breadcrumbs, to coat both sides evenly. Sprinkle with salt and white pepper. Allow the fish to rest at least 10 minutes before cooking.<\/p>\n<p>To make the parsley sauce, melt the butter in a pan over a medium heat, and whisk in the flour. Reduce the heat and cook the roux for 3\u20135 minutes until pale beige. Slowly add the milk into the roux; cook, whisking constantly, for about 5 minutes, until the sauce comes to boil and becomes smooth and thick. Season, add the parsley and simmer for 2 minutes.<\/p>\n<p>Cover and keep warm.<\/p>\n<p>Melt the butter in a large frying pan over medium-high heat. Cooking in two batches, place the halibut fillets in the pan, and cook for about 4 minutes on each side, turning once, until the coating is golden brown and the fish flakes easily with a fork.<\/p>\n<p>Serve the halibut fillets with the sauce spooned over.
