Line a baking sheet with parchment paper.<\/p>\n<p>Bring out three shallow bowls. Pour the flour into one, crack the eggs into the second and whisk them to combine, and stir together the breadcrumbs, salt, pepper, paprika, garlic powder, and onion powder in the last one.<\/p>\n<p>Cut the avocados in half and remove the pits. Cut each half in half, remove the skin, and slice each quarter into thirds. You should have 24 slices total.\nWorking with one slice at a time, dredge in the flour, followed by the eggs and then the breadcrumb mixture, to coat completely with each. Place on the baking sheet, not touching.<\/p>\n<p>Coat the avocado slices with cooking spray. Bake for 8 minutes.<\/p>\n<p>Carefully flip the fries and coat with more cooking spray. Bake for another 8 to 10 minutes, until golden brown.<\/p>\n<p>Let cool for a few minutes, then serve with ranch dressing.<\/p>\n<p><\/div>\n<p class=\"author-credit\">Reprinted with permission from Excerpted from Eat Smarter Family Cookbook by Shawn Stevenson.
