In a medium bowl, whisk together the eggs and milk, then stir in the corn, tomatoes with their juices, goat cheese, and thyme. Pour over the flour mixture and stir just to combine; don\u2019t overmix. Let sit for 10 minutes for the flour mixture to hydrate. Meanwhile, preheat the oven or toaster oven to 200\u00b0F.<\/p>\n<p>Heat 1 tablespoon oil in a large skillet over medium heat. Spoon about 2 tablespoons batter per corn cake into the skillet; cook in batches of four to avoid crowding. Cook until bubbles on the top begin to pop (similar to a pancake) and brown on the bottom, about 2 minutes. Flip the cakes and cook until brown on the other side, an additional 1 to 2 minutes. Transfer to a rimmed baking sheet and keep warm in the oven. Repeat cooking in batches with the remaining batter and 1 tablespoon oil per batch, for a total of 16 corn cakes.
