Toss to coat, then arrange cut side down. Place the smashed garlic cloves on a 6 \u00d7 6-inch piece of aluminum foil and drizzle with \u00bd tablespoon oil.<\/p>\n<p>Fold the foil into a packet around the garlic and place it on the baking sheet. Roast for about 20 minutes, until the radishes are tender and the garlic is very soft. Unwrap the garlic to cool slightly. When cool enough to handle, remove the garlic skins and\ntransfer the warm garlic and any oil remaining from the packet into a large bowl. Using a fork, mash into a chunky paste. Using a Microplane or citrus zester, grate the zest from the lemon over the garlic, then cut the lemon in half and squeeze in the juice from half of the lemon (save the remaining lemon half for another use). Whisk in the remaining 1 \u00bd tablespoons oil, olive liquid, black pepper, and red pepper. Stir in the olives and cilantro.
