Put mayonnaise into bowl with lemon juice, salt, and black garlic. Stir to incorporate. Place in fridge until needed.<\/p>\n<p>Arugula Dressing:<\/p>\n<p>Dress arugula with juice of lemon, olive oil, and black lava sea salt. Place in fridge until needed.<\/p>\n<p>Spicy Bacon Jam:<\/p>\n<p>Place jalape\u00f1o on hot grill and roast until charred. Cook bacon in a large, heavy bottomed pot until brown and mostly crisp. Remove bacon and place on a paper towel-lined plate and set aside. Remove all but 2 tablespoons of bacon grease and saut\u00e9 onion and shallots over low to medium heat, stirring often.<\/p>\n<p>Cook onions until soft and translucent, about 8 minutes. Add smoked paprika and stir until fully incorporated. Add water and scrape any brown bits at the bottom of the pan. Add maple syrup, brown sugar, cooked bacon, diced jalape\u00f1o, and vinegar. Bring to a boil and let cook until a bit of a glaze forms, about 10\u201315 minutes. Add mixture to the bowl of a food processor and pulse several times until a chunky jam consistency is obtained.<\/p>\n<p>Smoked Gouda Cheese Sauce:<\/p>\n<p>Grate smoked Gouda. Heat butter in pan. Once melted, add flour and stir to create roux. Add heavy cream and milk. Heat to almost boil and add grated smoked Gouda cheese. Keep adding until a thick sauce is formed. Remove from heat.<\/p>\n<p>Burgers:<\/p>\n<p>Form beef into 6 patties and season with BBQ seasoning. Grill until medium-well doneness, approximately 4\u20135 minutes per side on medium-high heat.
