Angus beef patties (I used Bo\u2019s Angus Beef Burger patties)<\/li>\n<li>Seasoning, to taste (Note: I used a steak rub of equal parts garlic powder, salt, and fine ground pepper.)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>Avocado Aioli:<\/strong><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>1\/4 cup olive oil mayonnaise<\/li>\n<li>1\/2 cup chunky avocado spread<\/li>\n<li>2 tablespoons lime juice<\/li>\n<li>1 tablespoon fajita seasoning<\/li>\n<li>1 tablespoon fresh cracked pepper<\/li>\n<li>1\/2 cup guacamole (I used Sabra)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>Chunky Guacamole:<\/strong> TIP: You can substitute the avocado spread with 1 cup of guacamole.<\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>3 avocados, peeled and diced<\/li>\n<li>1\/4 cup onion (red and\/or white)<\/li>\n<li>2 medium Roma tomatoes, diced<\/li>\n<li>1 tablespoon jalape\u00f1o, seeded and finely chopped<\/li>\n<li>2 tablespoons cilantro, diced<\/li>\n<li>2 tablespoons lime juice<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>Candied Bacon<\/strong><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>1 pound sliced bacon<\/li>\n<li>1 cup pure maple syrup<\/li>\n<li>1 cup brown sugar<\/li>\n<li>2 teaspoons red pepper flakes<\/li>\n<li>1 teaspoon paprika<\/li>\n<li>1 teaspoon chili powder<\/li>\n<li>1 teaspoon Cajun seasoning (I used Slap Ya Mama Hot Cajun Seasoning)<\/li>\n<li>1\/4 teaspoon onion powder<\/li>\n<li>1\/4 teaspoon garlic powder<\/li>\n<li>1\/4 teaspoon pepper<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>Garnish: (Optional)<\/strong><\/p>\n<ul>\n<li>1\/2 cup of tri-color tortilla strips<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p><strong>Candied Bacon:<\/strong>\nPreheat oven to 350\u00b0F.<\/p>\n<p>Whisk together the syrup and dry ingredients to make candied bacon topping. Line a baking pan with parchment paper. Lay out your bacon on the lined pan. Brush the syrup mixture onto both sides of the bacon for best results. Bake for approximately 20 minutes total at 350\u00b0F. The time will vary depending on elevation and oven type. At approximately the 10-minute mark, you will flip the bacon over and cook the opposite side. Around the 15\u201318-minute mark, you should begin to watch the candied bacon closely because it burns easily.<\/p>\n<p>You want the bacon to look brown and somewhat pliable. It may even look slightly undercooked. However, it will firm up nicely after it cools. If it\u2019s dark and crispy, you\u2019ve cooked it too long and the sugars will taste burnt.<\/p>\n<p>Once you remove the bacon from the oven, place the candied bacon strips immediately place on cooling racks.<\/p>\n<p><strong>Avocado Aioli and Chunky Guacamole:<\/strong>\nWhile bacon is cooking\/cooling, prepare the aioli and guacamole using the ingredients above. Once complete, lightly butter and toast buns to golden brown. (Note: I recommend using butter on the top bun only to prevent sogginess.)<\/p>\n<p><strong>Burgers:<\/strong>\n1.\u2000Preheat pan\/grill to 400\u00b0F.\n2.\u2000Season outside of patty to taste. Using my steak rub or something equivalent.\n3.\u2000Cook the burger patties to your desired temperature. ServSafe recommends 155\u00b0F, which is medium-well.\n4.\u2000Top each patty with 1 slice of pepper jack Havarti when the patty is approximately 10 degrees below your desired final temp. Melt cheese.
