{"id":15423,"date":"2024-09-12T15:02:08","date_gmt":"2024-09-12T15:02:08","guid":{"rendered":"https:\/\/healthyaging.net\/magazine\/uncategorized\/chunky-guacamole-cheeseburger-with-candied-bacon-2\/"},"modified":"2024-09-12T17:27:18","modified_gmt":"2024-09-12T17:27:18","slug":"taco-seasoned-avocado-infused-steak-burger","status":"publish","type":"post","link":"https:\/\/healthyaging.net\/magazine\/recipe\/taco-seasoned-avocado-infused-steak-burger\/","title":{"rendered":"Taco-Seasoned, Avocado-Infused Steak Burger"},"content":{"rendered":"<div class=\"wpb-content-wrapper\"><p>[vc_row css_animation=&#8221;&#8221; row_type=&#8221;row&#8221; use_row_as_full_screen_section=&#8221;no&#8221; type=&#8221;full_width&#8221; angled_section=&#8221;no&#8221; text_align=&#8221;left&#8221; background_image_as_pattern=&#8221;without_pattern&#8221;][vc_column][vc_column_text css=&#8221;&#8221;]<p class=\"back-link\"><a href=\"https:\/\/healthyaging.net\/magazine\/fall-2024\/super-bowl-of-foodies-stars-winning-burger-recipes\/\" target=\"_blank\" rel=\"noopener\">Back to Food Article<\/a><\/p><\/p>\n<p><a href=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2024\/09\/2018-WFC-Burger-10th-Susanne-Duplantis-1000.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-15425 size-full\" src=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2024\/09\/2018-WFC-Burger-10th-Susanne-Duplantis-1000.jpg\" alt=\"\" width=\"1000\" height=\"675\" srcset=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2024\/09\/2018-WFC-Burger-10th-Susanne-Duplantis-1000.jpg 1000w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2024\/09\/2018-WFC-Burger-10th-Susanne-Duplantis-1000-300x203.jpg 300w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2024\/09\/2018-WFC-Burger-10th-Susanne-Duplantis-1000-768x518.jpg 768w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2024\/09\/2018-WFC-Burger-10th-Susanne-Duplantis-1000-700x473.jpg 700w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<div class=\"recipe-card\"><\/p>\n<h3>Taco-Seasoned, Avocado-Infused Steak Burger<\/h3>\n<p class=\"servings\">Makes 6 servings<\/p>\n<p class=\"servings\" style=\"text-align: left;\"><strong>Homemade Chil Powder:<\/strong><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>1 medium dried Ancho chile<\/li>\n<li>1\/2 teaspoon cumin seed, toasted<\/li>\n<li>1\/2 teaspoon dried Mexican oregano<\/li>\n<li>1\/4 teaspoon garlic powder<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong> Tomatillo Salsa:<\/strong><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>2 tomatillos, husked, rinsed, halved<\/li>\n<li>1 poblano pepper<\/li>\n<li>2 Roma tomatoes, halved<\/li>\n<li>1 small purple onion, diced<\/li>\n<li>2 ounces chunky avocado spread (I used Walmart Brand)<\/li>\n<li>Salt, to taste<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>Cactus Tortilla Chips:<\/strong><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>2 10-inch flour tortillas<\/li>\n<li>Olive oil<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>Enchilada Sauce:<\/strong><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>1\/4 teaspoon olive oil<\/li>\n<li>1 tablespoon taco seasoning<\/li>\n<li>1\/4 teaspoon cayenne<\/li>\n<li>1\/4 teaspoon paprika<\/li>\n<li>Homemade chili powder (see recipe)<\/li>\n<li>10 ounces Mexican beer<\/li>\n<li>8 ounces tomato sauce (I used Red Gold Tomato Sauce)<\/li>\n<li>1 tablespoon unsalted butter (I used Challenge Unsalted Butter)<\/li>\n<li>1 tablespoon flour<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>Burgers:<\/strong><\/p>\n<ul>\n<li>2 pounds ground Angus beef (I used 1 bag Bo\u2019s Grand Slam Burgers)<\/li>\n<li>1\/4 pound beef chorizo<\/li>\n<li>1\/2 pound ground ribeye<\/li>\n<li>1 garlic clove, minced<\/li>\n<li>1 tablespoon red chili adobe<\/li>\n<li>1 tablespoon taco seasoning<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>1 onion, sliced<\/li>\n<li>1 red bell pepper, sliced<\/li>\n<li>1 yellow bell pepper, sliced<\/li>\n<li>1 green bell pepper, sliced<\/li>\n<li>1 orange bell pepper, sliced<\/li>\n<li>1 cup Mexican rice, cooked<\/li>\n<li>2 cups quesadilla cheese<\/li>\n<li>6 10-inch flour tortillas<\/li>\n<li>6 ounces chunky avocado spread (I used Walmart Brand)<\/li>\n<li>Juice of 1 lime<\/li>\n<li>2 ounces Mexican beer<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p><strong>Homemade Chili Powder:<\/strong><\/p>\n<p>Dampen dried Ancho chili and toast for 4 minutes in 350\u00b0F oven. Remove seeds and steam, then tear into pieces. Add to mini food processor. Pulse with cumin seeds, oregano, and garlic powder until fine. Set aside.<\/p>\n<p><strong>Tomatillo Salsa<\/strong><\/p>\n<p>Rub tomatillos, poblano, and tomatoes with olive oil. Bake for 15 minutes at 350\u00b0F. Remove pepper skin. Add to processor with dash of salt. Pulse for salsa. Mix with 2 ounces chunky avocado and purple onion.<\/p>\n<p><strong>Cactus Tortilla Chips:<\/strong><\/p>\n<p>Using cookie cutters, cut out cactus shapes out of tortillas, and put on sheet pan. Brush with olive oil and bake 7 minutes at 350\u00b0F.<\/p>\n<p><strong>Enchilada Sauce:<\/strong><\/p>\n<p>In a skillet over medium heat with 1\/4 teaspoon olive oil, toast 1 tablespoon taco seasoning, paprika, and cayenne over low heat, about 1 minute until it resembles coffee grinds. Stir in homemade chili powder. Raise heat to medium. Add tomato sauce and can of beer. Simmer for 10 minutes. Using hands, knead butter and flour together until well incorporated for a beurre mani\u00e9 (equal parts softened butter and flour blended together to help thicken sauces). Raise heat and bring to a boil. Whisk in beurre mani\u00e9 for 1 minute. Remove from heat.<\/p>\n<p><strong>Burgers:<\/strong><\/p>\n<p>Using hands, mix burger meat with chorizo, ribeye, garlic, red chili adobe, and 1 tablespoon taco seasoning. Form into patties. Heat a cast iron skillet over medium-high heat with olive oil. Add burgers and cook 4 1\/2 minutes. Flip, brush with enchilada sauce, and cook 3 minutes. Remove. Add peppers and onions to skillet and saut\u00e9 for 5 minutes. Lay out tortillas. Top each tortilla center with rice, saut\u00e9ed onions, peppers, and cheese. Place burger on top of mixture. Fold tortilla around burger. Place tortilla seam side down in skillet over medium heat. Cook 1 minute. Flip. Cook an additional 30 seconds. Remove. In a small bowl, mix 1 teaspoon lime juice and beer into remaining chunky avocado spread. Using an injector, inject quesadillas with avocado mixture.
