Add the greens, 1 tablespoon of water, and a pinch of salt and cook, stirring occasionally, just until wilted, about 2 minutes.<\/p>\n<p>Using tongs or a fork, transfer the greens to the toast, leaving the skillet over medium heat. Crack the egg into the skillet, season lightly with salt and black pepper, turn the heat down to low, and cook until the white is set and the yolk has reached the desired doneness (about 5 minutes for a runny yolk).
