Add the lard (or butter) and, using your fingertips, rub it into the flour until the mixture is sandy and holds together when squeezed with your hands. Slowly drizzle in the warm water and use your hands to mix until you have a soft, cohesive dough that is stretchy like pizza dough.If the dough still has not come together, add more water, 1 tablespoon at a time; if the dough seems too wet, add more flour, \u00bc cup at a time.Turn the dough out onto a lightly floured surface and knead until smooth, about 4 minutes. Shape the dough into a ball. Wipe out the bowl you used to make the dough, grease it with some lard, and return the dough to the bowl.Lightly coat the top of the dough with a light layer of lard. Cover with a kitchen towel and let rest in a warm spot for 20 minutes.\n<p>Divide the dough into 20 equal portions (about 2\u00bd ounces each). Roll each portion into a ball and use a rolling pin to roll each ball into a 6-inch round (about \u00bc inch thick).<\/p>\n<p>Set out a tortilla warmer (or line a large bowl with a large kitchen towel) and have it near the stove. Heat a comal, nonstick griddle, or large dry cast-iron skillet over medium heat. Cook one tortilla at a time until they fluff up, about 2 minutes. Flip and cook on the other side until puffy, about 1 minute more.<\/p>\n<p>The tortillas should have beautiful brown charred spots on both sides.
