Toss to combine and evenly coat.<\/p>\n<p>Divide the vegetables between 2 sheet pans, making sure they are spread in even layers, with room between the ingredients so they brown, rather than steam. Place the sheet pans in the oven and roast for 40 minutes, rotating the sheets halfway through, until everything is golden brown and tender.<\/p>\n<p>Remove from the oven, and once cool enough to handle, squeeze the garlic cloves out of their skins, then discard the skins and add the garlic to the vegetables. Taste and season with additional salt and pepper, as desired.
