Photo: Donal Skehan<\/p><\/p>\n<div class=\"recipe-card\"><\/p>\n<h3>Sticky Sesame and Sriracha Chicken with Chopped Salad<\/h3>\n<p class=\"servings\" style=\"text-align: center;\">Makes 4 servings<\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li>1 teaspoon vegetable oil<\/li>\n<li>4\u20138 skinless chicken thighs, cut into bite-size pieces<\/li>\n<li>5 tablespoons sriracha sauce<\/li>\n<li>Thumb-size piece of fresh ginger, peeled and very finely chopped<\/li>\n<li>Zest and juice of 1 lime<\/li>\n<li>1 tablespoon honey<\/li>\n<li>2 teaspoons light soy sauce<\/li>\n<li>1 teaspoon sesame oil<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h4>For the salad:<\/h4>\n<ul>\n<li>\u00bd head red cabbage, finely sliced<\/li>\n<li>5 oz. kale (about 1\/3 bunch), leaves torn from stem and finely sliced<\/li>\n<li>2 carrots, julienned<\/li>\n<li>1 teaspoon sesame oil<\/li>\n<li>1 red bell pepper, deseeded and cut into bite-size pieces<\/li>\n<li>1 yellow bell pepper, deseeded and cut into bite-size pieces<\/li>\n<li>1 cup frozen edamame beans, thawed<\/li>\n<li>Handful of cashews, toasted<\/li>\n<li>1 tablespoon sesame seeds, toasted<\/li>\n<li>Large handful of cilantro<\/li>\n<\/ul>\n<p>Heat the oil in a wok or a large frying pan over medium-high heat and fry the chicken pieces until just browned on all sides. Add the sriracha sauce, ginger, lime zest, half the lime juice, honey, soy sauce, and sesame oil, and toss to coat. Cover and simmer for 8 minutes, or until the sauce has thickened slightly and the chicken is completely cooked through.<\/p>\n<p>Meanwhile, prepare the salad. Place the red cabbage, kale, and carrots in a large mixing bowl with the remaining lime juice and sesame oil.
