Photo: Ancient Grains<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Lemon Chickpea Quinoa<\/h3>\n<p class=\"servings\">Makes 4 servings<\/p>\n<ul>\n<li>1 cup <a href=\"http:\/\/shop.ancientharvest.com\/Harmony-Quinoa\/p\/ACH-180002&amp;c=AncientHarvest@Quinoa\" target=\"_blank\" rel=\"noopener noreferrer\">Ancient Harvest\u2122 Tri-Color Quinoa<\/a><\/li>\n<li>1 tablespoon extra-virgin olive oil<\/li>\n<li>1 1\/2 cups frozen corn, thawed<\/li>\n<li>1 1\/2 cups cooked chickpeas, rinsed and drained<\/li>\n<li>1.5 ounce package baby spinach<\/li>\n<li>Optional toppings: goat cheese or feta cheese<\/li>\n<li><strong>Salad Dressing:<\/strong><\/li>\n<li>6 tablespoons fresh lemon juice<\/li>\n<li>6 tablespoons extra virgin olive oil<\/li>\n<li>6 tablespoons well-chopped Kalamata olives, pitted<\/li>\n<li>1 1\/2 teaspoons dried oregano<\/li>\n<li>1\/4 teaspoon salt and black pepper<\/li>\n<\/ul>\n<p>Cook quinoa according to package instructions.\nAdd dressing ingredients into a jar and shake well. Set aside.\nHeat oil in a large skillet over medium heat.\nAdd corn and chickpeas and cook for 5-7 minutes.
