Photo: Mike Garten<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Mediterranean Cod<\/h3>\n<p class=\"servings\">Makes 4 servings<\/p>\n<ul>\n<li>1 cup marinara sauce<\/li>\n<li>2 medium zucchini, chopped<\/li>\n<li>4 pieces cod fillets (6 ounces each)<\/li>\n<li>Salt<\/li>\n<li>\u00bc teaspoon ground black pepper<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>2 cloves garlic, chopped<\/li>\n<li>1\/4 teaspoon crushed red pepper<\/li>\n<li>1 pound spinach<\/li>\n<\/ul>\n<p>In a 10-inch skillet, combine marinara sauce and zucchini. Heat to simmering over medium heat.\nSprinkle cod with 1\/4 teaspoon each salt and pepper; add to simmering sauce. Cover and cook 7 for minutes or until cod is just opaque throughout.<\/p>\n<p>Meanwhile, in 5-quart sauce pot, heat olive oil over medium heat until hot. Add garlic and crushed red pepper; cook for 1 minute, stirring occasionally. Add spinach and remaining 1\/8 teaspoon salt; cover and cook for 5 minutes or just until spinach wilts, stirring occasionally.
