Peel, core, and slice the pears very thinly. Put them in a large bowl with the orange peel, orange juice, and lemon juice. Set aside.<\/p>\n<p>Melt the butter in a cast iron or other ovenproof pan, about 9 inches in diameter, with high sides. Add the cream and corn syrup and stir. Add the oats, flour, baking soda, salt, and sugar. Stir to combine. Gently press the pear slices into the mixture in the pan.
