Photo:From Off the Hook \u00a9 2018, DL Acken and Aurelia Louvet.Recipes and images provided courtesy of TouchWood Editions.<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Beet-Cured Gravlax with Easy Apple Pickle<\/h3>\n<p class=\"servings\">Makes 6 to 8 servings<\/p>\n<ul>\n<li><strong>Crust<\/strong><\/li>\n<li>1 teaspoon freshly grated lemon zest<\/li>\n<li>2 dried juniper berries, ground<\/li>\n<li>2 tablespoons finely chopped dill<\/li>\n<li>1 teaspoon liquid smoke<\/li>\n<li>6 tablespoons coarse sea salt<\/li>\n<li>2 tablespoons sugar<\/li>\n<li>1 pound coho or wild sockeye salmon<\/li>\n<li>2 large purple beets, peeled and grated<\/li>\n<li><strong>Apple Pickle<\/strong><\/li>\n<li>2 medium apples, cored<\/li>\n<li>1 cup vinegar<\/li>\n<li>2 tablespoons sugar<\/li>\n<li>1 tablespoon coarse sea salt<\/li>\n<li>1 tablespoon orange zest<\/li>\n<li>1 tablespoon peeled, finely chopped ginger<\/li>\n<\/ul>\n<p>Cut the salmon into chunks and pulse in a food processor until loosely chopped. Add the cilantro, green onion, ginger, sea salt, and pepper, then pulse twice, until just combined. Add the lime zest and juice, sambal oelek, panko, and mayonnaise and pulse again briefly.<\/p>\n<p>Heat the olive oil in a skillet over medium-high heat.<\/p>\n<p>Shape the salmon mixture into 4 \u00d7 4-inch patties approximately 1 inch thick. Fry until golden brown on both sides, about 4 minutes per side. Place on a plate lined with paper towels and keep warm in the oven until serving.<\/p>\n<p>Slice the buns in half and toast lightly. Spread 1 tablespoon Sriracha Aioli on each bun half, fill with burger, lettuce, tomato, and pickle.
