Whisk in the lemon juice with 1 tbsp of the olive oil to make a marinade.<\/p>\n<p>Place the trout in a dish and cover with the marinade. Turn the fish to make sure they are well coated, cover with plastic wrap and chill for at least 2 hours or overnight.<\/p>\n<p>Preheat the oven to 400\u00baF. Place the potatoes in a roasting pan, toss them in 2 tbsp olive oil and season with salt and pepper. Roast for 45 minutes or until tender. Remove from the oven and set aside to cool.<\/p>\n<p>Reduce the oven temperature to 375\u00baF. Remove the trout from the marinade and place in a roasting pan. Bake for 20 minutes or until cooked through. Remove from the oven and leave to cool.<\/p>\n<p>Cut the potatoes into chunks, flake the trout into bitesize pieces and toss them together in a serving dish with the remaining olive oil.
