{"id":8254,"date":"2018-10-26T12:26:19","date_gmt":"2018-10-26T12:26:19","guid":{"rendered":"https:\/\/healthyaging.net\/magazine\/uncategorized\/spiced-trout-salad-2\/"},"modified":"2018-10-31T17:06:53","modified_gmt":"2018-10-31T17:06:53","slug":"spiced-trout-salad-2","status":"publish","type":"post","link":"https:\/\/healthyaging.net\/magazine\/recipe\/spiced-trout-salad-2\/","title":{"rendered":"Baked Trout with a Gremolata Crust"},"content":{"rendered":"<p><p class=\"back-link\"><a href=\"https:\/\/healthyaging.net\/magazine\/?p=7966&amp;preview=true\" target=\"_blank\" rel=\"noopener noreferrer\">Back to Food Article<\/a><\/p><\/p>\n<p><a href=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/troutgremolata-600.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-8260 aligncenter\" src=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/troutgremolata-600.jpg\" alt=\"\" width=\"600\" height=\"742\" srcset=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/troutgremolata-600.jpg 600w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/troutgremolata-600-243x300.jpg 243w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<div class=\"recipe-card\"><\/p>\n<h3>Baked Trout with a Gremolata Crust\/h3&gt;<\/h3>\n<p class=\"servings\">Makes 4 servings<\/p>\n<ul>\n<li style=\"list-style-type: none\">\n<ul>\n<li>1 small eggplant, cubed<\/li>\n<li>1 red bell pepper, diced<\/li>\n<li>1 yellow bell pepper, diced<\/li>\n<li>1 small red onion, chopped<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>12 oz. trout fillets<\/li>\n<li>Juice of 1 lime<\/li>\n<li>Salt and ground black pepper<\/li>\n<li>Chunks of bread, to serve<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p><strong>For the gremolata crust:<\/strong><\/p>\n<ul>\n<li>Grated rind of 1 lemon<\/li>\n<li>Grated rind of 1 lime<\/li>\n<li>\u00bd cup fresh breadcrumbs<\/li>\n<li>2 tablespoons chopped fresh flat leaf parsley<\/li>\n<li>1 garlic clove, finely chopped<\/li>\n<\/ul>\n<p>Preheat the oven to 400\u00baF. Place the eggplant, peppers and onion in a roasting pan. Add the oil and stir to coat. Sprinkle with salt and pepper. Cook for 40 minutes or until the edges of the vegetables have begun to char.<\/p>\n<p>Make the gremolata by mixing the lemon and lime rind with the breadcrumbs, chopped parsley and garlic. Season.<\/p>\n<p>Place the trout fillets on top of the vegetables in the roasting pan and cover the surface of the fish with the breadcrumb mixture. Return to the oven for a further 15 minutes or until the fish is fully cooked and the gremolata topping is crunchy.<\/p>\n<p>Divide the fish and vegetables among four serving plates and sprinkle the lime juice over to taste.
