Preheat the oven to 350\u00b0F and grease two baking sheets with olive oil.<\/p>\n<p>Arrange potatoes on the prepared baking sheets. Drizzle more olive oil over the potatoes and generously sprinkle with salt. Bake for 15\u201320 minutes. Repeat this baking process with the zucchini, but omit the salt and bake for only 5 minutes. Whisk the eggs, panna, and black pepper in a bowl and set aside.<\/p>\n<p>In a large casserole dish (see Note), arrange your ingredients in layers: Place a layer of potatoes on the bottom of the dish and brush with some egg mixture. Add a layer of zucchini and sprinkle with the herbs. Add a layer of the Mozzarella cheese and then add a layer of the Parmesan cheese. Repeat this layering process until the whole casserole dish is full. Pour the remaining egg mixture over the top, and, finally, add a layer of breadcrumbs. Bake, covered with a lid or foil, for 30 minutes.<\/p>\n<p><em><strong>Note:<\/strong> We use a round glass casserole dish with a lid or a 13 x 9 x 2-inch baking dish that we cover with foil.
