{"id":8319,"date":"2018-10-28T20:50:19","date_gmt":"2018-10-28T20:50:19","guid":{"rendered":"https:\/\/healthyaging.net\/magazine\/uncategorized\/cakey-cauli-cookies-2\/"},"modified":"2018-10-31T17:03:01","modified_gmt":"2018-10-31T17:03:01","slug":"cauliflower-chocolate-and-coconut-cake","status":"publish","type":"post","link":"https:\/\/healthyaging.net\/magazine\/recipe\/cauliflower-chocolate-and-coconut-cake\/","title":{"rendered":"Cauliflower, Chocolate and Coconut Cake"},"content":{"rendered":"<p><p class=\"back-link\"><a href=\"https:\/\/healthyaging.net\/magazine\/fall-2018\/books\/?preview_id=8004&amp;preview_nonce=9e6760d2e1&amp;post_format=standard&amp;_thumbnail_id=8194&amp;preview=true\" target=\"_blank\" rel=\"noopener noreferrer\">Back to Food Article<\/a><\/p><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/7858_caulicarrotcreamcake61764.-600.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8325\" src=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/7858_caulicarrotcreamcake61764.-600.jpg\" alt=\"\" width=\"600\" height=\"551\" srcset=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/7858_caulicarrotcreamcake61764.-600.jpg 600w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/7858_caulicarrotcreamcake61764.-600-300x276.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><div class=\"recipe-card\"><\/p>\n<h3>Cauliflower, Chocolate and Coconut Cake<\/h3>\n<p class=\"servings\">Makes one 8-inch cake<\/p>\n<ul>\n<li>1\/2 cup coconut oil<\/li>\n<li>1\/2 cup maple syrup<\/li>\n<li>\u00bc cup coconut sugar<\/li>\n<li>1\/4 cup coconut sugar<\/li>\n<li>\u00be oz. chocolate, 70% or 100% cocoa solids<\/li>\n<li>\u00bd teaspoon pink or sea salt<\/li>\n<li>2\/3 cup aquafaba i.e. the liquid from a can of chickpeas<\/li>\n<li>1 1\/2 cups coconut flour<\/li>\n<li>\u00be teaspoons baking soda<\/li>\n<li>4 cups grated cauliflower (about 1 large head, cored), plus florets for decoration<\/li>\n<li>For the frosting<\/li>\n<li>14 oz. \/ 2 blocks solid creamed coconut<\/li>\n<li>4 tablespoons boiling water<\/li>\n<li>3 tablespoons maple syrup<\/li>\n<li>1\/2 cup coconut or non-dairy milk<\/li>\n<li>1 carrot, for decoration<\/li>\n<\/ul>\n<p>Preheat the oven to 350 degrees F. Line the bottoms of two 8 inch round loose-based cake pans with baking parchment. The batter is quite oily so there\u2019s no need to grease non-stick pans.<\/p>\n<p>In a saucepan, heat the coconut oil until liquid and then mix in the maple syrup and coconut sugar. Heat for 2 minutes until bubbling and combined. Break in the chocolate, take the pan off the heat, and stir so it combines. Add the salt, and set aside.<\/p>\n<p>In a bowl, whisk the aquafaba for 4 minutes with an electric hand mixer on the highest setting until it forms soft, white peaks. Fold in the chocolate mixture and then the flours, baking soda, and grated cauliflower.<\/p>\n<p>Transfer the batter equally into the prepared cake pans and bake for 40 minutes until still moist but fairly firm in the centers. Allow to cool in the pans, then transfer to wire racks to cool completely, being careful as they are so squishy. Leave in the fridge overnight \u2013 this does improve the consistency and makes the cakes fudgy and cohesive.<\/p>\n<p>The next day, grate the creamed coconut into a bowl, and, using a metal spoon, blend with \u00bc cup boiling water, the 3 tablespoons maple syrup and the coconut milk to make a creamy frosting. Stand for 10 minutes to warm and combine, then blend again. (If you prefer, you can simply use canned coconut cream instead of the block and coconut milk.)<\/p>\n<p>Removing the paper, set the first cake on a plate. Spread with coconut frosting then peel the paper from the second cake and place it on top. Cover with the rest of the frosting. Decorate with carrot ribbons (I use a vegetable peeler) and tiny cauliflower slices. This cake keeps for 4 days in an airtight container, and improves every day.<\/p>\n<p>DECORATION IDEA\nTop the cake with sweet, crisped cauliflower florets if you like. Place small slices on a baking sheet and drizzle with 15ml\/1 tbsp of maple syrup.
