{"id":8342,"date":"2018-10-29T17:18:21","date_gmt":"2018-10-29T17:18:21","guid":{"rendered":"https:\/\/healthyaging.net\/magazine\/uncategorized\/mozzarella-and-spinach-pasta-salad-2\/"},"modified":"2018-10-31T17:00:57","modified_gmt":"2018-10-31T17:00:57","slug":"apple-fennel-and-kohlrabi-salad-with-shaved-manchego-and-candied-walnuts","status":"publish","type":"post","link":"https:\/\/healthyaging.net\/magazine\/recipe\/apple-fennel-and-kohlrabi-salad-with-shaved-manchego-and-candied-walnuts\/","title":{"rendered":"Apple, Fennel and Kohlrabi Salad with Shaved Manchego and Candied Walnuts"},"content":{"rendered":"<p><p class=\"back-link\"><a href=\"https:\/\/healthyaging.net\/magazine\/fall-2018\/books\/?preview_id=8004&amp;preview_nonce=9e6760d2e1&amp;post_format=standard&amp;_thumbnail_id=8194&amp;preview=true\" target=\"_blank\" rel=\"noopener noreferrer\">Back to Food Article<\/a><\/p><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/Fennel-600.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8348\" src=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/Fennel-600.jpg\" alt=\"\" width=\"600\" height=\"726\" srcset=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/Fennel-600.jpg 600w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2018\/10\/Fennel-600-248x300.jpg 248w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><div class=\"recipe-card\"><\/p>\n<h3>Apple, Fennel and Kohlrabi Salad with Shaved Manchego and Candied Walnuts<\/h3>\n<p class=\"servings\">Makes 4 to 6 servings<\/p>\n<ul>\n<li><strong>Candied Walnuts<\/strong><\/li>\n<li>1\/2 cup walnuts, halved<\/li>\n<li>1 to 2 tablespoons honey<\/li>\n<li><strong>Apple Cider Vinaigrette<\/strong><\/li>\n<li>1\/2 tablespoon apple cider vinegar<\/li>\n<li>1\/2 tablespoon Dijon mustard<\/li>\n<li>1\/4 teaspoon fennel seeds, toasted and ground<\/li>\n<li>1\/2 tablespoon honey<\/li>\n<li>3 tablespoons best-quality extra-virgin olive oil<\/li>\n<li>2 fennel bulbs<\/li>\n<li>2 Granny Smith apples<\/li>\n<li>1 large kohlrabi bulb<\/li>\n<li>1 small package mixed baby lettuce<\/li>\n<li>3 ounces 12-month Manchego, thinly shaved<\/li>\n<li>Sea salt and freshly ground black pepper<\/li>\n<\/ul>\n<p><strong>Candied Walnuts<\/strong><\/p>\n<p>Preheat the oven to 350\u00b0F.<\/p>\n<p>Place the walnuts in a small bowl and toss to coat lightly with honey, salt, and pepper to taste. Line a baking sheet with parchment paper and spread the walnuts on it. Roast for 10 to 12 minutes, tossing the nuts halfway through to ensure even cooking. Slide the sheet of parchment paper onto a cooling rack and spread the nuts out in a single layer to cool.<\/p>\n<p><strong>Apple Cider Vinaigrette<\/strong><\/p>\n<p>Combine the vinegar, mustard, fennel seeds, and honey in a small bowl. Add salt, and then slowly whisk in the olive oil until the mixture thickens and takes on a shiny appearance. Add black pepper to taste.<\/p>\n<p>Trim the stalk and fronds of the fennel. You can use them as an aromatic in a Basic Vegetable Stock or Fish Stock. Cut the fennel bulb vertically in half. Scoop out the tough core and discard it. Slice the fennel halves diagonally, making sure to keep the slices as thin as possible. Halve and core the apples, and cut them into thin slices. Remove any knobby bits from the kohlrabi, cut it into quarters, and then into thin slices. If you have a mandoline, it is a lot quicker to get perfectly thin slices of apple, fennel, and kohlrabi.<\/p>\n<p>Add the fennel, apple, and kohlrabi slices, along with the lettuce, half the candied walnuts, and half the Manchego to a large mixing bowl. Toss to coat with the vinaigrette, starting with half and then adding little by little to ensure that you don\u2019t overdress the salad.<\/p>\n<p>Transfer the salad to a vinaigrette-coated serving bowl.
