Maitake Mushrooms<\/li>\n<li>1 leek<\/li>\n<li>1 cup fresh corn<\/li>\n<li>2 stalks celery, chopped<\/li>\n<li>1 quart chicken stock<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>4 sprigs thyme<\/li>\n<li>4 cloves garlic<\/li>\n<li>1 cup cream<\/li>\n<li>2 Poblanos, minced<\/li>\n<li>Salt and pepper<\/li>\n<li>\u00bd cup sour cream<\/li>\n<li>2 limes cut into wedges<\/li>\n<li>1\/2 cup fresh cilantro, minced<\/li>\n<\/ul>\n<p>Coarsely chop 1 1\/2 pounds Maitake mushrooms. Toss with olive oil, corn and Poblanos. Roast at 400 degrees F. until crispy. Roast remaining Maitake at 450 degrees F. until crispy.<\/p>\n<p>In a large stockpot, combine chicken stock, 2\/3 of the roasted vegetables, celery, leeks, garlic and thyme. Simmer until tender. Remove thyme.<\/p>\n<p>Add cream and puree until smooth. Add remaining roasted vegetables. Add salt and pepper to taste.
