But the \u201cone pot\u201d for today\u2019s cook can take the shape of much more than a stew pot. It could be a slow cooker, pressure cooker, Dutch oven, skillet, sheet pan, or the latest, an Instant Pot\u00ae, which is today\u2019s answer to the pressure cooker.<\/p>\n<p>If you grew up in the 1950s and had a mother who was skillful with the pressure cooker, then you were lucky.<\/p>\n<p>As a baby boomer, the thought of using a pressure cooker with the chance that it might explode deterred me from even trying what appeared to be a clumsy, scary piece of equipment.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-8569 size-full\" src=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2019\/01\/One-Pot-Recipes-COVER-650.jpg\" alt=\"\" width=\"584\" height=\"650\" srcset=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2019\/01\/One-Pot-Recipes-COVER-650.jpg 584w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2019\/01\/One-Pot-Recipes-COVER-650-270x300.jpg 270w\" sizes=\"auto, (max-width: 584px) 100vw, 584px\" \/>But things have changed as Ellen Brown, author of more than 40 cookbooks and now <em>One Pot Recipes<\/em>, tells us in her new cookbook.<\/p>\n<p>\u201cCooking with just one pot or a pan is a welcome throwback to the historic roots of American cooking,\u201d Brown said. \u201cIt\u2019s only been in the past century that cooking has involved more than a few pans. It\u2019s worth revisiting pressure cookery with an Instant Pot!<\/p>\n<p>Brown organizes the recipes in the book according to the pot in which they\u2019re cooked.
