{"id":9786,"date":"2020-01-15T20:50:48","date_gmt":"2020-01-15T20:50:48","guid":{"rendered":"https:\/\/healthyaging.net\/magazine\/uncategorized\/crispy-chicken-with-white-wine-pan-sauce-2\/"},"modified":"2020-01-16T19:51:30","modified_gmt":"2020-01-16T19:51:30","slug":"enchiladas-verdes","status":"publish","type":"post","link":"https:\/\/healthyaging.net\/magazine\/recipe\/enchiladas-verdes\/","title":{"rendered":"Enchiladas Verdes"},"content":{"rendered":"<p><p class=\"back-link\"><a href=\"https:\/\/healthyaging.net\/magazine\/winter-2020\/get-egg-sited-about-chicken-pure-poultry-in-motion\/\">Back to Food Article<\/a><\/p><\/p>\n<div id=\"attachment_9871\" style=\"width: 710px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9871\" class=\"wp-image-9871 size-full\" src=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2020\/01\/Enchiladas-Verdes.-700w.jpg\" alt=\"\" width=\"700\" height=\"552\" srcset=\"https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2020\/01\/Enchiladas-Verdes.-700w.jpg 700w, https:\/\/healthyaging.net\/magazine\/wp-content\/uploads\/2020\/01\/Enchiladas-Verdes.-700w-300x237.jpg 300w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><p id=\"caption-attachment-9871\" class=\"wp-caption-text\">Enchiladas Verdes Photo: \u00a9 Mike Garten<\/p><\/div>\n<div class=\"recipe-card\"><\/p>\n<h3>Enchiladas Verdes<\/h3>\n<p class=\"servings\">Makes 4 servings<\/p>\n<ul>\n<li>10 ounces tomatillos (about 4), halved<\/li>\n<li>2 cloves unpeeled garlic<\/li>\n<li>1 large yellow onion, cut into 1-inch-thick wedges<\/li>\n<li>1 large poblano pepper, halved and seeded<\/li>\n<li>1 jalape\u00f1o pepper, halved and seeded<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>Kosher salt and pepper<\/li>\n<li>1 1\/2 cups cilantro leaves, plus additional 1\/2 cup coarsely chopped cilantro<\/li>\n<li>7 tablespoons fresh lime juice<\/li>\n<li>3 cups shredded rotisserie chicken<\/li>\n<li>2 green onions, thinly sliced<\/li>\n<li>1 1\/2 cups shredded Monterey Jack cheese<\/li>\n<li>1\/2 cup salsa verde<\/li>\n<li>8 small corn tortillas<\/li>\n<li>1 small red onion, thinly sliced (optional)<\/li>\n<li>Cilantro, for topping (optional)<\/li>\n<\/ul>\n<p>Preheat broiler.<\/p>\n<p>On large, rimmed baking sheet, toss tomatillos, garlic, onions, poblanos, and\njalapeno peppers with oil and 1\/2 teaspoon each salt and pepper. Turn peppers cut side down and broil, rotating pan every 5 minutes until vegetables are tender and charred, 15 minutes. Discard skins from poblanos and garlic. Transfer broiled vegetables to blender. Add 11\/2 cups cilantro leaves, 3 tablespoons fresh lime juice, and 1\/4 teaspoon salt and puree until smooth.<\/p>\n<p>Preheat oven to 400\u00b0F. In bowl, toss chicken with green onions and 2 tablespoons fresh lime juice. Fold in 1\/2 cup chopped cilantro and 1 cup shredded Monterey Jack cheese.<\/p>\n<p>Spread 1\/2 cup salsa verde in 13 \u00d7 9-inch baking dish and transfer rest to bowl. Dip each of the tortillas in salsa, then fill each with about 1\/2 cup chicken mixture. Roll tortillas around filling and place, seam side down, in prepared dish. Top with any remaining salsa and sprinkle with 1\/2 cup shredded Monterey Jack. Bake until\nbeginning to brown, 8 to 10 minutes.<\/p>\n<p>Meanwhile, toss red onion with 2 tablespoons fresh lime juice and pinch each salt and pepper; let sit 10 minutes.
