Cook in olive oil on medium high, skin side down, in large oven-safe skillet until golden brown, about 6 minutes.<\/p>\n<p>Turn chicken over; add green beans, cherry tomatoes, and butter beans, and season with 1\/4 teaspoon salt. Roast until chicken is cooked through (165\u00b0F), 12 to 15 minutes.<\/p>\n<p>Brush pesto over chicken and serve with grated Parmesan and chopped basil.<\/p>\n<p>Pesto<\/p>\n<p>In a food processor or blender, pulse 3 cups loosely packed fresh basil leaves, 1 large garlic clove crushed with a press, 1\/2 cup extra-virgin olive oil, 1\/4 cup grated Parmesan cheese, 1\/4 cup toasted pine nuts, 2 teaspoons fresh lemon juice, and 1\/4 teaspoon ground black pepper until smooth. Scoop into a covered container and refrigerate up to 3 days or freeze up to 3 months.
