Sleep-Better Egg Toast with Goat Cheese, Lemon & Greens is A quick, nutrient-dense breakfast that introduces fiber-rich greens first thing in the morning to support digestion and reduce inflammation—two key factors in better sleep.

Sleep-Better Egg Toast with Goat Cheese, Lemon, and Greens

Makes one serving

  • One ½-in. slice whole grain sandwich bread, toasted
  • 1 tablespoon fresh goat cheese
  • 2 teaspoons extra-virgin olive oil
  • 1 medium garlic clove, thinly sliced
  • 2 cups mixed baby greens
  • Kosher salt and freshly ground black pepper
  • 1 large egg
  • 1/2 teaspoon finely grated lemon zest
  • Fresh lemon juice
  • Pinch of crushed red chile flakes (optional)

Spread the goat cheese over the toast and set aside on a plate.

Add the oil to a well-seasoned cast-iron or nonstick skillet over medium heat; when the oil begins to shimmer, add the garlic and cook, stirring frequently, until soft and fragrant, 1–2 minutes. Add the greens, 1 tablespoon of water, and a pinch of salt and cook, stirring occasionally, just until wilted, about 2 minutes.

Using tongs or a fork, transfer the greens to the toast, leaving the skillet over medium heat. Crack the egg into the skillet, season lightly with salt and black pepper, turn the heat down to low, and cook until the white is set and the yolk has reached the desired doneness (about 5 minutes for a runny yolk). Slide the sunny-side up egg atop the greens, garnish with lemon zest, a squeeze of fresh lemon juice, and crushed red chile flakes, if using, and serve hot.
